Chipotle Garlic Instant Pot Country Style Pork Ribs

Ingredients
  

  • 3 lbs country style pork ribs (boneless or bone in)
  • 15 oz can crushed tomatoes
  • 1 cup ketchup
  • 2 tablespoon honey
  • 3 tablespoon crushed garlic
  • 2 tablespoon smoked chipotle tabasco sauce
  • 2 tablespoon ground chipotle powder

Instructions
 

  • Add tomatoes, sauce, ketchup, honey, garlic and seasonings to pressure cooker. Whisk together.
  • Submerge pork ribs in sauce.
  • Place lid on Instant Pot, making sure release valve is set to closed.
  • Set timer to manual for 45 minutes.
  • When timer goes off, allow to sit for 5 minutes for boneless and 10 minutes for bone-in. Quick release steam when time is up.
  • You will know the ribs are done when they are fork tender and flake apart. Serve with a little sauce spooned over the meat.
  • These ribs reheat very well. In fact, I think they taste better the more they are reheated! If you have leftovers, put them in a oven safe dish and cover with the sauce. Reheat in your oven at 350° for 30 minutes.
