I tried all the popular instant pot Mac and Cheese recipes out there and pulled the best parts in order to develop this recipe.

Equipment

  • Pressure Cooker

Ingredients
  

  • 4 cups Chicken Stock
  • 16 oz Elbow Noodles
  • 12 oz Evaporated Milk
  • 1 tablespoon Tomato Paste
  • 1 tablespoon Dry Mustard Powder
  • 2 cups Shredded Sharp Cheddar
  • 1 cup Shredded Sartori Sarvecchio or other Parmesan

Instructions
 

  • Add chicken stock, pasta, tomato paste and mustard to Instant Pot and stir. Close lid and set on manual, high pressure for 4 minutes. 
  • When the timer goes off do a quick release. DO NOT DRAIN THE PASTA.
  • Add evaporated milk and cheese to the pot and stir until creamy. 
  • Serve.
  • Claim trophy for best Mac and Cheese.
