In April I had the opportunity to travel with Veal, Discover Delicious to tour veal farms and a veal processing plant. The tour was eye-opening and I shared about it HERE. After the tours wrapped up for the day we headed to the kitchen and got creative with some veal recipes. Each of us on the tour got to make a different recipe and then we got to try them all. That night I made a goat cheese stuffed veal burger that was seriously tasty and had me dreaming up other stuffed veal burger recipes. This recipe is the result of that initial spark!

Where do you buy ground veal?
I am pretty lucky and my local grocery store carries ground veal in the freezer section. If your local grocery doesn't carry it, you may be able to order some via a local butcher or specialty foods shop, or there are a few online options where you can buy ground veal and have it shipped right to your door.

What does veal taste like?
Veal is has a very mild flavor. So anything you pair with it can really shine without being overpowered by it's flavor. The flavor of ground veal is more pronounced than ground turkey or chicken, but it's not as strong as ground pork or beef. Ground beef is a good source of Riboflavin, Vitamin B6, Vitamin B12, Phosphorus and Zinc, and a very good source of Protein and Niacin. The fat content of ground veal makes for excellent burgers that are flavorful but not too greasy.
My secret ingredient to make super juicy and flavorful burgers.
I have a secret weapon for making incredibly juicy and flavorful burgers. I stumbled onto this idea because I am always looking for ways to get more fiber and whole grains into my kids. I've been stirring chia seeds into yogurt and making them into pudding for a few years. One night I had the thought about adding dry chia seed into our burgers. You couldn't tell they were there at all! But then I experimented with using different liquids to soak the chia seeds and infuse the burgers with flavor and moisture. I tried it and was blown away! The chia tastes like whatever you soak it in and that flavor infuses the burger!
Side dish recipes to go along with burgers-
Smokey Garlic Cheddar Stuffed Veal Burger
Ingredients
- 1 lbs Ground Veal
- 3 oz Aged Sharp Cheddar
- 1 tablespoon Chia Seeds
- 1 tablespoon Minced Garlic
- ⅓ cup Beer Ale or Lager
- 1 tablespoon Smoked Chipotle Tabasco Or
- 1 teaspoon Ground Chipotle Powder
- 3 Buns
Instructions
- Combine chia seeds, garlic, chipotle and beer in a small bowl and allow to soak for 30 minutes.
- Add chia mixture to ground veal and mix well.
- Divide ground veal into six equal parts and form burger patties with each part.
- Add 1 oz cheddar to the center of three patties.
- Top with the other patties and press edges firmly to seal.
- Grill or pan fry on each side until internal veal burger temperature is 160°
- Serve on a toasted bun with your favorite burger toppings.
